This year I'm really motivated to loose weight and eat healthier. Last year I went to a pampered chef party a friend was hosting and she served some yummy nectarine salsa with quesadilla cups. Here's my version without the quesadilla.
*THIS IS THE ORIGINAL PAMPERED CHEF RECIPE*
1/4 | cup (50 mL) roasted red peppers, drained and patted dry |
1 | serrano pepper, seeded (i used jalapeno) |
2 | tbsp (30 mL) finely chopped red onion |
2 | tbsp (30 mL) finely chopped fresh cilantro |
1 | lime |
1/4 | tsp (1 mL) salt (i used no salt) |
You can increase the ingredients according to how much you would like to make.

wash roasted bell pepper & pat dry then dice it along with
the nectarine & cilantro
Yummy and healthy!

squeeze lime & mix
I used wheat thins flat bread in garlic & parsley and spread it with the laughing cow swiss cheese wedges.Yummy and healthy!
